Chunky Granola Clusters (Toasted Museli chunks ..really)

This is my basic recipe for chunky, cinnamon-ny, crunchy granola and a perfectly tuned start to the day ..or end to it ..or just as a snack on yogurt. You can mix it up with whatever you like. Who am I to say what should go into your granola.
 
Ingredients:
½ cup vegetable oil or coconut oil
½ cup honey, golden syrup, maple syrup, agave ... any of your sweeteners.
1/4 cup light brown sugar
1 egg white lightly beaten
1 tbsp. vanilla extract
2 Tbsp cinnamon
½ tsp. salt
5 cups rolled oats
3 cups (total) of your favourite added extras flavours (i love flaked coconut, chopped nuts, dried fruit, sunflower seeds, sesame seeds, pepitas and maybe even chocolate chunks, etc.)
 
Method:
Mix all wet ingredients together in large bowl and whisk until sugar starting to dissolve. Stir through all the dry ingredients excepts the dried fruit and chocolate.
 
Mix together well and press into 2 baking trays. Press in well - this will make sure you get large chunky clusters not just little ones.
 
Bake in slow oven (about 130'C) for unto 1 hour until all is golden and crisp. If adding fruit, I like to add it 5 minutes before the end to give some extra chew.
 
Try to avoid too much mixing and stirring it while it's cooking as this will also break up the chunky bits.
 
When cooked, leave to cool for 1 hour before breaking up into chunks and storing in air-tight container.
